Brown bread is better than white bread, right? For you, maybe not

A new study by researchers at the Weizmann Institute of Science in Israel revealed that white bread actually might not be that bad - for some people.

The two bread types also did not appear to have any difference in effect on the gut microbiome.

All of the participants in the study normally consumed about 10 per cent of their calories from bread. After a two-week break, they switched, and for a week the group that had previously eaten white bread ate the sourdough bread, and vice versa. The composition of the microbiome in the people whose response to white bread produced high blood sugar levels differed from that of the people who responded to sourdough bread with high blood sugar.

"The findings are clear - there was no effect of the type of bread on over 20 clinical measurements".

The researchers analyzed bacteria found in participants' guts and found they could predict which bread would suit an individual better based on their intestinal flora alone.

If you read "clean eating" blogs and follow #fitspo Instagrammers, you'd be forgiven for thinking that processed white bread is basically poison.

What picked up the research team's curiosity is that there is a great number of people that eat mass-produced white bread compared to those who choose artisanal or homemade bread, both of which show considerable differences, consisting mostly of their preparation process and the additives employed on their refining. Some people responded well to one bread, while others didn't due to their gut bacteria.

Whole grains contain dietary fibre, B vitamins, iron, magnesium, and zinc and are therefore considered "healthy, " but they are removed in the milling process of refined flour. Tthe study actually gave people more sourdough, however, since it was created to have equal amounts of carbohydrates in each two week period, and whole wheat has lower concentrations of available carbohydrates for a given weight.

More research, however, may be necessary to exactly understand how different kinds of bread and food affect different individuals. They couldn't eat the night before and they also had to abstain from food for about two hours after eating bread.

He added: "These findings could lead to a more rational approach for telling people which foods are a better fit for them, based on their microbiomes [a group of microorganisms such as bacteria and viruses]".

"To date, the nutritional values assigned to food have been based on minimal science, and one-size-fits-all diets have failed miserably".

"It may be that this is too small a group to detect potentially small differences but the fact remains that there was no measureable effect on health".

Therefore, researchers made a decision to see how our bodies react to white bread containing refined wheat and to whole grain bread produced through traditional methods.
